Did I pick my tomato too soon?

by John M.

Tomato was red and looked ready to pick. However, when cut, it was greenish on the inside. The outside was not very soft around the stem and about 1/3 of the tomato. Did it need to be softer before picking?

John,

Most tomatoes ripen from the inside out. The seeds are green before they ripen because they contain chlorophyll ... which you probably know makes plants have a green color.

As tomato seeds ripen, they turn a beige or off white color.

That means a green tomato interior is colored that way by unripened seeds. In other words, a tomato interior that's not yet red means the tomato is not yet fully ripe.

Hope this helps! Happy gardening.
