Great question!

The best time of day to pick a tomato is morning. As tomato plants "sleep" overnight, moisture replenishes the fruit. Starches turn to sugars as the plants rest out of the sun and heat. Tomatoes are at their plumpest and sweetest in the morning after the dew has evaporated but before the sun gets too high in the sky.
